Wanted Sushi Chef for CYPRUS
To prepare sushi and sashimi as directed by the Executive Chef in Order to exceed guest expectations to be quality driven and critical of all aspects of the Food and Beverages operation in order to guarantee the highest level of creativity and productivity within the organization.
Key Performance and Job Evaluation
To prepare fish and rice for sushi
To prepare and make sushi and sashimi
To maintain reasonable stock levels and assist the Head Chef in ordering
To keep all sushi preparation and sushi bar areas clean at all times.
To work in any area of the kitchen as and when directed to do so by the Executive Chef and or the Head Chef
Job Particulars
To study and learn the cuisine of the Executive Chef
To follow the recipes in the recipe book to the closet detail
To ensure that MEP is ready on time and to the correct specifications
To be in control of the sushi section
To assist the Head Chef by training other chefs in the brigade on sushi and sashimi skills
To attend kitchen meetings as and when required
To study and understand the HACCP system employed at Thanos Hotels
To monitor HACCP systems (fridge temperature and cleaning records) in the sushi section on a daily basis.
To fill in all relevant HACCP forms on a daily basis and take any necessary action in a proactive fashion in relation to any HACCP procedures
To report any problems or shortcomings in relation to the above to the Executive Chef immediately
To attend monthly HACCP meetings, as scheduled by the Executive Chef 


Salary: 2500 – 3500 EUROS gross per month
